Roquefort Soufflé



OK, even though this was about a month ago, I am still very proud of the fact that I successfully made a soufflé. I was told by certain parties that I'd be daft to attempt one, as I was still a relatively novice cook. This despite the fact that I'd already created several different dishes from various origins and with stringent specifications, such as a whole menu of vegan meals. I was daunted yet undeterred, but I found that making the Roquefort soufflé to be much easier than I imagined. I think having a mixer really helped.



Now I realize from the photos that some may theorize that the soufflé didn't rise, but the fact is that my soufflé dish was twice as big as required for the amount I was making, so it appears small. I ended up eating almost the whole thing, it was soooo delicious, and Edie returned home from work to find a small sliver remaining in the dish and myself passed out on the couch. I can't wait to make another one.
